Keto Root Beer Float

Dave and I recently bought an ice cream maker! I know this may seem shocking but you can’t exactly have ice cream while on Keto, but I love ice cream. Like, a lot. So, a few days ago we bought a really cheap ice cream maker and went home and immediately made ice cream.

Dave made chocolate, I made vanilla/caramel. They are very, very tasty.

For the chocolate Dave followed the manufacturer’s recipe and just used whipping cream, dark baking chocolate and erythritol in place of the carb-y stuff. He froze it a bit too long but it tasted a lot like chocolate ice cream so who’s complaining.

For the vanilla I did 2 cups of Lactantia whipping cream, 4 tablespoons of Torani Sugar Free Caramel Syrup, 3 tablespoons of erythritol, and 1 tablespoon of vanilla extract. I mixed it for a bit and the poured it into the ice cream maker.

30 minutes later I had some really good ice cream. 2 minutes after that I put some in a glass, added some Diet A&W Root Beer and voila, I had a dang keto root beer float! Will make again constantly!
